Project Description

Ingredients (for 8 people):

  • 650 g rice
  • 1 chopped onion
  • 1 glass of preferably dry white wine
  • 100 g fresh blueberries
  • 80 g dry porcini mushrooms
  • Vegetable broth
  • Extra virgin olive oil
  • Salt to taste
  • Terra del Tuono’s Blueberry condiment


  • First of all, rehydrate the mushrooms in lukewarm water for about 15 minutes, then clean them accurately. In the meantime, prepare the vegetable broth, preferably with seasonal vegetables. Add oil to saucepan and sauté the onion until tender and translucent. Add rice, and stir to coat for a couple of minutes. Add the white wine and cook until the liquid is absorbed
  • Add the vegetable broth until it covers the rice, stir and add the porcinis cut into cubes. Continue cooking, stirring often and adding broth as needed. 5 minutes before the rice is done, add the blueberries and stir until the risotto is creamy
  • Add salt to taste in a cup of broth and continue stirring. One last touch for your blueberry and porcini risotto? A sprinkle of Terra del Tuono’s Blueberry Condiment!
